Makes enough for 10 people

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

Making the Citrus Syrup: Combine all the items into a pan, heat until it reaches a simmer, mixing so the sugar melts. Then, turn off the heat and leave to cool down fully. Transfer to a sealable bottle, seal and store chilled, it will last for around four weeks.

To make Batch Mix: Combine all the spirits and syrup into one big jug, allow it to infuse for 60 minutes, then strain best through muslin, so it's perfectly clear.

To serve: Measure 85ml of your batch mix into a stirring glass packed with ice, and stir gently for about 60 seconds to chill. Strain into a frosted cocktail glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
